"ตำรับอาหารไทย-ฮาลาล มาตรฐานวิทยาลัยดุสิตธานี" เล่มนี้ จัดทำขึ้นเพื่อมุ่งส่งเสริมการเผยแพร่อาหารไทยให้เป็นที่ยอมรับกว้างขวางมากขึ้น โดยเฉพาะในกลุ่มประชากรมุสลิมซึ่งมีอยู่เกือบ 2,000 ล้านคนทั่วโลก
